This August at Sandhills Community College, indulge in a world of flavors, explore the intricacies of our justice system, or delve into the world of literature. Offered through the Workforce Continuing Education division, you can choose from several culinary classes, immerse yourself in literature, or begin to understand our justice system.

Culinary

"BBQ" lets students get down and dirty. "Bring him a wet tablecloth" was a phrase heard from grandfathers growing up when eating pork ribs. The joy a beautifully smoked rack of ribs can bring is unmatched. Students will look at different BBQ styles and preparations. Pellet grills, lump burning grills, charcoal, electric. Why are there so many, and when are they used? We also dive into the sauces of American BBQ tastings prepared in class. Held Friday, August 18, from 6–8 pm, this class will cost $75.

"Saucy" is about sauces, the mother of sauces, which will be created in class, and students will also dive into the derivatives of these sauces. How and when to use what sauce and what additions will enhance our flavors. Held Monday, August 21, from 6–8 pm, this class will cost $75.

In "Savory Tarts," students will learn how to mix, shape, and create their own tart with seasonal ingredients. Chef Jason will teach students to make the perfect crust from scratch and how to prepare a classic quiche Lorraine for the class. Held Wednesday, August 23, from 6–8 pm, this class will cost $75.

"Buttercream Flowers- Advanced" will expand on the basic decorating class and move into making flowers. Students will learn to pipe 4-5 different buttercream flowers. Then, the students will ice and stack a cake to decorate it with the flowers they just created. Held Wednesday, August 23, from 5–8 pm, this class will cost $75.

"Chocolate Mousse" will explore how to make a classic French chocolate mousse, prepare a toasted hazelnut brownie, chocolate ganache, and combine them all to create a delicious dessert. Chef will also demonstrate how to make a quick vegan chocolate mousse with just two ingredients. Held Friday, August 25, from 5–8 pm, this class will cost $75.

"Knife Skills" will teach students to feel confident with a knife in the kitchen and help reduce accidents by teaching sharpening and cutting techniques you can practice and use every day. Students will bake chicken wings and legs in class after learning how to properly break down a whole chicken. Held Monday, August 28, from 6–8 pm, this class will cost $75.

"Mexican Cuisine" will explore dishes that are ordered all the time. Students are going to explore the trending Mexican cuisine with hopes of finding some new flavors and dishes that can surprise their guests right from home. Arroz con pollo or chimichangas will be made in class. Held Wednesday, August 30, from 6–8 pm, this class will cost $75.

Personal Enrichment

In "Fall Book Club," students will enjoy stimulating discussions with other bibliophiles as we read and engage in conversation about one book each month. Registration required. Limited seating. Held on Fridays, August 18, September 15, October 20, and November 17 from 2-4 pm, this class is free.

"…and Justice for all" will take you on an exciting journey through our nation's legal system and the maze of recent federal court decisions impacting our criminal justice system and the political process. Sharp focus will be on the Rule of Law and its application to everyone regardless of status or position. Peter Yellin, former Chief Prosecutor for Military Trials with the 2nd Marine Division at Camp Lejeune and Chief of Staff to the New York and Arkansas Attorneys General, will host these highly interactive and important discussions. Early registration is highly recommended, as seating is limited. Held on Wednesdays, August 9, September 13, October 11, and November 8, this class is free.

Seats are still available for these Workforce Continuing Education classes and do not require an application. To register, call Continuing Education at (910) 695-3980 between 8 am and 5 pm Mondays through Thursdays and 8 am-noon on Fridays. All major credit cards are accepted. Fall Semester

A fall semester flightPath has been published on the Sandhills Community College website (www.sandhills.edu/flightpath). It contains information about all curriculum programs and Workforce Continuing Education classes set to begin in August through December.

Curriculum classes will begin on August 14. In addition to the traditional 16-week semester, there will be two eight-week sessions, one beginning on August 14 and the second on October 11. Boys & Girls Club

A Boys & Girls Club unit is offered on the Sandhills campus. It runs from 2:30 to 6:30 pm for kindergarten through fifth grade. The club is ideal for parents/guardians taking SCC afternoon or evening classes, those who need study time, need to utilize the computer lab or work on projects. Club participants will receive homework assistance, and dinner is offered. The cost is $40 per child per year. The club provides transportation from McDeeds Creek, Farm Life, and Carthage Elementary schools.

In addition, drop-in services are available free of charge to Sandhills students from 6-9 pm. This is ideal for students taking afternoon or evening classes, working on group projects, or for other academic reasons. Classes for High School Students

Moore and Hoke County High School students can take SCC classes as juniors and seniors at no cost. High school counselors can help schedule these classes, or home or private school students can contact Kim McMillan at mcmillank@sandhills.edu.

Students who reside in Moore and Hoke Counties and successfully complete the required number of classes through Sandhills while in high school can qualify to receive two full years of paid tuition through our Sandhills Promise program. Sandhills awards over $350,000 to pay tuition and fees for Sandhills Promise students each year. The Sandhills Promise applications are due each year by mid-July.
